Scallop and prawn spaghetti fried with XO sauce*

Two months ago, a friend invited L and I to a pre-opening dinner at a new cafe that he co-owns. We could order whatever we liked and then give him our comments so that he could tell the kitchen what adjustments had to be made for the paying customers when the place opened.

The menu featured the usual spread of salads, sandwiches, pasta and desserts. I ordered the scallop linguine fried with XO sauce, which intrigued me since it combined my favourite pasta and my favourite Chinese condiment.

The plate that I had was great, and I figured that it would be easy to cook it myself.

I give my effort a rating of 3 out of 5. The seafood tasted dry, which was not surprising as I had been frying them for 3 minutes when I realized that I had not added any garlic. So I turned the flame off while I smashed two cloves of garlic - the seafood must have dried up from the prolonged heat.

Anyway this not a difficult dish to make at all. XO sauce makes anything taste good. I had used spaghetti instead as I could not find linguine at the supermarket.

* XO sauce : dried, minced scallop in chilli and oil

It's in the Tin Hau district in Hong Kong, just beside Causeway Bay.

hey, if the shrimps are too dry (and if you're in a fit of panic), toss in some agua.

(some words of advice from one lousy cook).
